Pumpkin Spice Granola

This Pumpkin Spice Granola is a perfect Autumn treat that combines the cozy warmth of pumpkin and spice with crunchy, nutty goodness. Made with wholesome ingredients like rolled oats, pumpkin seeds, and walnuts, it’s a delicious and nutritious snack to enjoy any time of day. Whether you’re topping your yogurt, sprinkling it over smoothie bowls, or simply munching on it by the handful, this homemade granola is sure to become a favourite.


Ingredients:

•    2 cups rolled oats 
•    1/2 cup pumpkin puree 
•    1/4 cup maple syrup or honey
•    1/4 cup olive oil or coconut oil (melted)
•    1/2 cup raw pumpkin seeds
•    1/2 cup raw sunflower seeds
•    1/4 cup walnuts or pecans
•    1 tsp ground cinnamon
•    1/2 tsp ground nutmeg
•    1/4 tsp ground ginger
•    1/4 tsp ground allspice


Instructions:
•    Prepare the Wet Ingredients: In a large bowl, combine the pumpkin puree, maple syrup or honey, melted coconut oil, and vanilla extract. Stir well until smooth.    
•    Add the Dry Ingredients: To the wet ingredients, add the rolled oats, pumpkin seeds, chopped nuts, and spices. Mix well until all the dry ingredients are evenly coated with the wet mixture.
•    Spread the Granola: Spread the granola mixture evenly onto the dehydrator trays with solid liner in a thin layer.    
•    Dehydrate: Set the dehydrator to 50°C and dehydrate for 6-8 hours. Check it periodically; If the granola feels too moist, let it dehydrate longer until it reaches a crispy texture.


Store: Store your granola in an airtight container at room temperature for up to two weeks.

Optional Add-ins:
•        Chia seeds or flaxseeds for extra nutrients.
•        Shredded coconut for a bit of sweetness and texture.
•        Chocolate chips or cacao nibs for a treat!
