Lemon Verbena, Mint and Citrus Tea

 

Feel free to substitute out these herbs and fruit with any others you have on hand or desire. Camomile, rose, orange, strawberry, hibiscus, ginger, turmeric, sage and rosemary all work beautifully.

 

Ingredients

  • 2 large handfuls of Lemon Verbena
  • 2 large handfuls of fresh mint
  • 6 lemons

 

Method

 

  1. Slice the lemons into 5mm thick slices.
  2. Remove any large stalks from the herbs.
  3. Place the herbs and lemons onto Ezi Dri Dehydrator trays. Use spacer rings if needed to give extra height to accomodate larger herbs.
  4. Dehydrate at 30ºC for 6 hours. After 6 hours remove the herbs and increase the temperature to 50ºC and continue to dehydrate the lemons for a further 6 hours or until fully dry and crisp with no soft bits.
  5. Remove the leaves from any remaining stalks and crush slightly as you add them to a clean airtight jar interspersed with lemon rounds.
  6. To make the tea place 1 tablespoon of tea and one lemon round per person into a tea pot. Pour over hot water and allow to steep for 3-5 minutes.
