Spaghetti Bolognese for your Hiking/Tramping Trip

When you're deep in the great outdoors, a hot, hearty meal can feel like the ultimate comfort. Dehydrated Bolognese sauce is the perfect solution for adventurers who want to enjoy a delicious, home-style dinner without carrying heavy ingredients. Lightweight, easy to rehydrate, and packed with the rich flavours of tomatoes, herbs, and savoury ground meat, this sauce is a game-changer for camping, hiking, or hunting trips. With a little preparation at home, you'll have a portable gourmet meal ready to revive your spirits after a long day on the trail. Just add water and heat slowly. Pair it with pasta or rice, and savour the taste of comfort under the stars.

Ingredients:

  • 400g minced heef
  • 1 onion, finely chopped
  • 2 cloves of garlic, minced
  • 1 carrot, finely grated
  • 2 tbsp olive oil
  • 2 cans (400g) diced tomatoes
  • 2 tbsp tomato paste
  • 1 tsp dried oregano or Italian herbs
  • Salt and pepper, to taste
  • Spaghetti (enough for 2-4 servings)

Method

  1. Heat olive oil in a large heavy based pot. Add the onions and sauté until softened. Then add the garlic and cook for a further minute.
  2. Increase the heat and add the mince and grated carrot. Breaking up and cooking until browned.
  3. Add the cans of tomato, tomato paste and the herbs, seasoning to taste.
  4. Cook for a further 10-15 minutes until thickened..
  5. Allow the mix to cool.
  6. Line 2-3 Ezi Dri Dehydrator trays with solid sheets and spread the Bolognese mixture out in a thin layer over each of the trays.
  7. Place into the Ezi Dri Dehydrator and dehydrate at 55°C for 8 hours or until the mix is completely dry and crisp.
  8. Store in an airtight container until ready to use.
  9. To rehydrate, simply pour the mix into a pot and add water so it is just covering the mince. Bring to a very gentle simmer and cook slowly for 20-30 minutes until the Bolognese is thick, rich and completely rehydrated. Serve over pasta for a simple and delicious meal on your camping, hiking or hunting trip
