Walnut and Oat Crackers

You are going to love the simplicity of these crackers made with healthy ingredients and no added nasties like many other commercial brands.

Rich and buttery, these crackers have a delicate snap and pair perfectly with a sharp blue cheese and a drizzle of honey.

They look incredible included on an antipasto platter and would also make a delicious lunch topped with some cream cheese and smoked salmon.


Ingredients:

  • 200g (2 1/2 cups) quick cook porridge oats
  • 170g (1 1/2 cups) walnuts
  • 3 tablespoons psyllium husk
  • 125ml (1 1/2 cup) water
  • 1 teaspoon salt
  • 100g butter, melted.

 

Method:

  1. Add all the ingredients to a food processor.
  2. Process until the mixture becomes a rough paste.
  3. Dot the mixture over a Ezidri solid sheet insert.
  4. Place a square of baking paper over the top and roll the mixture with a rolling pin until it is roughly 0.5cm thick.
  5. Score the crackers gently with a knife.
  6. Place into the Ezidri dehydrator at 70ºC for 8 - 10 hours, turning the crackers halfway through the dehydration process.
